Dinner Time...AGAIN?

I'm so sick of making dinner. Well not really making it but thinking of what to make. We had sushi Tuesday night and that took all of my creative juices for the next two weeks. I need everyone to post and tell me what they had for dinner LAST night. I just need to know what people are eating besides spaghetti, pizza, and breakfast for dinner.

If you have read this blog then you HAVE to post. It's written in really fine print somewhere on this blog.

  1. All right! I'll post. Last night I made a gourmet meal of Chili dogs and carrots. Yum yum. ;) The night before we had breakfast for dinner, and the night before that I think we had spagetti. Obviously, I'm having the same problems you are.

  2. Last night, because Dad and I were late getting home from work (becasue of stupid car problems) we stopped at Smiths to get a perscription filled and picked up one of those roasted chickens. Then I put in some potoates to microwave and we had left over squash Dad baked a few nights ago. Tonight I am making stir fry with my bottled chicken and a fozen pack of vegtables.

  4. Last night we had spaghetti, but we used whole-wheat ziti noodles because the kids love them. Why? I can't tell you. Maybe it's the shape.

    Tonight we are having lemon chicken. It's really easy. Cut the chicken up into bit-size pieces and fry them in a bit of olive oil until they're browned. Remove to a plate and put some salt and pepper over them. Drain off the excess oil and to the drippings add a few tablespoons of butter (or Can't Believe it's Not Butter if you're calorie-conscious) and about 1/3 cup lemon juice. Sprinkle in some parsley. Return the chicken to the pan and let the mixture simmer for about 15 minutes or until the lemon/butter starts to reduce and make a thicker sauce. Serve over rice.

    If you want to make this a slightly fancier dinner, put some broccoli, mushrooms or asparagus in with the chicken for the last 7 minutes or so of simmering (add more lemon juice and butter if you need it and cook longer if you like limper veggies... I don't). Instead of rice, pick your favorite fancy shape of pasta (I like farfalle or bowtie). Toss the cooked pasta in a bit of olive oil and then pour the chicken/veggie mixture over it. Top with some Italian cheeses and maybe some fresh tomatoes... it looks so fancy and it's really good.

  7. I am NOT telling you what I had for dinner last night. But I'll tell you what I would have made if Stan were here.
    Chicken Enchiladas. Or Beef Stroganoff. Or Immigrant rice. Or maybe all three.

  8. We had some sauted mushrooms bathed in a a creamy broth, drizzled over a filet mignon, some buttery arichoke hearts cooked with Garlic and some tiramasu and creme brolle for dessert.
    Ah just kidding! I can't even spell most of that stuff. Mandy made chicken breast and served it over rice.

  11. We had cheese enchiladas with halepenos and a green salad. The other nights we had spaghetti, taco soup, Hawaiian haystacks. I have a problem finding dinner meals also.

  12. Ha Ha! We had enchiladas, too. Actually that was two nights ago. I was sick of playing mommy yesterday and Carl took me out to Applebees... he had a hamburger and I had some famncy version of Mac n cheese with grilled chicken. The rest of the week consisted of Manicotti and Pizza. Tonight I think will be pork chops, but the lemon chicken sounds yummy, too.

  14. I agree that deciding what to make is just as painful as actually making dinner. Last night we had cheese-potatoe soup and tonight we had beef stroganoff. I have found that the easiest meals are actually BBQ meals! All you have to do is stick some meat on the grill, cook some vegetables and while you bake some potatoes or cook some rice! And it's delicious! Also, I love Chili. It's fast and easy to make and you always have extras for later! I have a TON of recipes that I typed up on my computer. I'd love to share if you give me your e-mail!

  15. Cashew chicken it is a real chinese dinner and oh so so so good. Of course that is not what I had for dinner las night. I don't think you are looking for grapes and corndog and pudding on the side. Don't tell Ster I fed my kids lunch for dinner.

  16. We had buffalo chicken wraps for dinner last night. I just buy the buffalo chicken strips and grab some salad and tomatoes and some dressing if you like and throw it in a tortilla. very quick and easy. We have the same problem finding dinner ideas. It seems we always have some kind of chicken,hamburgers, steak,spaghetti or tacos. I am all for easy dinners so if you find some quick and easy ones let me know!

  17. I have been going through this same thing so I get of Kraftfoods.com and find one new thing a week to cook.. Dan thinks it's great. We also eat Poppyseed chicken like all the time Aunt Susan use to make it when we would go to her house for dinner its my FAVORITE>>> you should just join a recipe swap that would help you out so much..

  18. You took all my ideas, pizza, spaghetti and breakfast for dinner! Just kidding.

    We had beef brisket last night that was in the crock pot all day. Today we are going to make tacos out of the left overs. Maybe a salad with the continued leftovers for lunch after that?

    We like casseroles. 101 things to do with a casserole cook book and the crock pot 101 things, since we love eating right when we get home from work.

  19. I hate making dinner too... I think ice cream is nice and healthy and wouldn't mind eating it every night. There is an idea for you. I think Eli would love it.
